Heat radiates out from the heat source, which in this case is a wood fire, and is spread around the oven. This heat is ultimately absorbed by the interior brick walls and radiates across the dome very evenly while the floor of the oven remains slightly cooler. This is the type of environment that makes an exceptional pizza!

Faster Cooking Time

Because of the high heat stores in the dense walls, a brick oven is designed to cook pizza quickly. It takes about 3 minutes maximum for a pizza to cook, which is great if you want to churn out a lot of pizzas!
